You’re missing a few things, I’m afraid.
Firstly, that this thread is about setting up modifier buttons, to reassign the channel number on single-channel MIDI overlays.

(but if you did want to discuss that, I’d say that this request is more complex than it probably should be, because the overlays are potentially multi-channel as-is. Meaning, the user can already assign each key to output on whatever channel they’d like, and they probably don’t want this modifier key to force every note onto the same channel if they’ve already divided them across several. So, some fairly significant restructuring is needed, to even make sense of the request.)
And then, secondly?
Buchla Thunder defaults to MPE, which… one doesn’t take manual control over the channels on.
(If you were hoping to divide the overlay into several MPE zones, that’s different. And arguably a feature request deserving of its own thread.)

But taking your question at face value…
If you select each pad and change them from “MPE XYZ Pad” to “MIDI CC Slider/Knob”, let’s say, you can assign those to whatever CC number on whatever channel you want.

Why would you want to send duplicate sensor reading to multiple endpoints, though?
That wasn’t a rhetorical question; you should not want that. Redundant output is bad. There’s only so much bandwidth to go around, and less so over bluetooth.
(I mean… just map all those parameters to the one CC in your DAW, or on your hardware synth.)
